Tips and Tricks

I bake. A lot. At times I've been known to fill my freezer up with baked stuff. And I have been cooking more and more as well. Wait, what's the difference? Well, baking is a science and cooking is an art. Proportions do matter in baking, and can be fudged in cooking. I happen to enjoy both.

Because I tend to repeat favorite recipes, and because I tend to make a humongous mess when I am in the kitchen, I started putting my recipes online so I could simply print a new copy when I needed one. I print them and slide them into page protectors in a 3 ring binder, and voila...cookbook! Granted, I have a huge pile of commercial cookbooks and cooking magazines, but this binder is my guide and first stop. And since I use it so much, I decided to put the cookbook together online and on a CD, in case anyone ever wanted a copy of a recipe, or in case I dropped my binder in a vat of boiling water. If you've seen me cook, you know it could happen...

Here are the main sections of this cook"book":

  • Candy: Before I was a cook, I was a confectioner, so this section is probably the largest. Also includes Cookies.

  • Cakes and Pies: Coming in a close second in my list of favorite things to make.

  • Custardy Things: Custards, trifles, brulees and other semi-solid sweets.

  • Breads: A few eclectic recipes I've picked up here and there. Includes breakfast foods like French Toast, Cinnamon Rolls, and Waffles.

  • Entrees: These should all be adjusted "to taste", as I don't measure much when I'm making entrees.

  • Sides and Special Dishes: This is where I put the Latke recipes. I love Latkes! Also includes anything not easily categorized, like Lemon Curd and Sauces.

  • Beverages: Drinks, mostly non-alcoholic but not totally. Plus, can't you put booze in anything anyway?

  • Canning: I really enjoy making jams, jellies, pickles, and preserves. Here are my favorite, tried-and-true recipes, plus tips and hints.

  • Tips and Tricks: Many of my tips and tricks, all in one place instead of hiding at the end of recipes.
