Almond Roca

My co-worker Kim brought this to the Holiday potluck. It's fabulous. I couldn't stop eating it. It's totally yummy. If I had almonds, I'd make it right now.

Ingredients

  • 2 cups sugar
  • 1/2 cup water
  • 3 cubes butter (cut up)
  • 6 Hershey bars (regular size)
  • chopped almonds

I wonder if this is how Brown and Haley started...

Combine the water and the sugar, boil until clear and smooth. Add the cut-up butter, and cook to 300 degrees on thermometer. It will turn caramel colored. Be sure to stir constantly.

Pour into buttered 9x13 pan. While warm, place 6 Hershey bars on top. When they melt, spread them evenly, and sprinkle with chopped nuts. When cooler, use a knife to break into pieces. Wrap in foil.

Notes and Hints and Stuff

  • What the Hell is a Cube?
    To me, a cube is a solid geometric shape with 6 sides and all edges being equal in length. In cooking, it's apparently 1/2 cup. Also known as 1/4lb, or one stick. These sticks are most decidedly not cubical. Whatever. Go with it.
  • This is Hard
    I ended up throwing the first batch I made away completely. It sugared instead of going crunchy. It wasn't bad tasting, but the texture was just wrong. The second batch *almost* worked. I'm hoping 3rd time is the charm. All I can say is to cook the sugar water until it's actually clear before you add the butter, and to be sure to cook it to 300 degrees on the thermometer, and don't overbutter the pan.
