I have made this cake, but I haven't tried it. I'm told it's pretty good. I got the recipe from allrecipes.com!
Ingredients
- 1 cup graham cracker crumbs
- 1/2 cup finely chopped pecans or walnuts
- 3 Tablespoons white sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup unsalted butter, melted
- 2 (8oz) packages cream cheese, softened
- 1/2 cup white sugar
- 2 eggs
- 1/2 teaspoon vanilla extract
- 4 cups tart apples, peeled, cored, thinly sliced
- 1/3 cup white sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup finely chopped pecans or walnuts
Crust
Preheat oven to 350. In large bowl, stir together graham cracker crumbs,
1/2 cup nuts, 3 Tablespoons sugar, 1/2 teaspoon cinnamon, and melted butter.
Press into bottom of a 9" springform pan. Bake in preheated oven for 10
minutes.
It's the Cheesiest
In a large bowl, combine cream cheese and 1/2 cup sugar. Mix at medium
speed until smooth. Beat in eggs, one at a time, mixing well after each
addition. Blend in vanilla. Pour filling into baked crust.
Where Are The Apples?
In a medium bowl, stir together 1/3 cup sugar and 1/2 teaspoon cinnamon.
Toss the cinnamon sugar with the apples to coat. Spoon apple mixture over
cream cheese layer and sprinkle with 1/4 cup chopped nuts.
Notes and Hints and Stuff
- Too Much Cinnamon Is Never Enough
I didn't measure the cinnamon. I shook a WHOLE BUNCH into the crust, and a
WHOLE BUNCH into the apples. And I added some to the filling itself.
- Be Creative
Try adding a dash of allspice or nutmeg, or some cloves. I did.
- How Thin Should the Apples Be?
I left them 1/4" thick or more. They baked up kind of firm and a bit crunchy.
One person asked if I'd used dried apples. Another commented that they were
good, but not soft. If you want soft, apply-pie apples, either dice the
apples or slice them very thin. Either way, it seems to be good.
- Add Lemon Juice
I added a bit of lemon juice to the apple topping to keep the apples tart
and not brown. Hey, it works for apple pies, why not apple cheesecake?
