Apple Nut Chews

I have no idea where this recipe came from. I found it in my mother's cupboard. If you know what Applets are, they're similar to that, but chewier.

Ingredients

  • 2 cups unsweetened apple juice
  • 4 cups sugar
  • 1-2 Tablespoons lemon juice
  • 4 Tablespoons gelatine dissolved in 1/2 cup hot water
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup nuts (walnuts are the usual)

Cookin' and Gellin'

Bring first five ingredients to a quick boil. Boil for 20 minutes. Stir often. Remove from heat. Add vanilla and nuts. Pour into a greased 9x13 or 9x9 pan. Let stand in fridge for at least 24 hours. Cut in squares and roll in powdered sugar.

Notes and Hints and Stuff

  • Wow, these are sticky!
    I've found that if you pack them in powdered sugar and stick them in the freezer for a couple of days before serving, they lose a lot of that initial stickiness. The sugar forms a kind of crust, and keeps the inner jelly in where it belongs.
  • Use utility scissors to cut them
    These may likely be too sticky for a knife to cut effectively. Use a clean pair of utility shears instead. Simply lift the entire jelly blob out of the pan, set it on a powdered sugar-coated surface, and cut into ribbons, then into squares.
