Aronia-Huckleberry Jam

I have an aronia berry bush in the back yard. There are virtually no recipes available for this little berry. It looks reasonably like a blue or huckleberry, so...this is what I made with it!

Ingredients

  • 2 cups crushed aronia berries
  • 2 cups crushed huckleberries
  • 4 cups sugar
  • 1 packet Sure-Jell Powdered Pectin

Sterilize and heat jars, scald lids and keep warm (see canning tips if you're unsure what this means.)

In a large saucepan, combine the fruit and pectin. Bring to a boil over medium heat, stirring often. Add the sugar all at once, and stir until dissolved. Return the mixture to a full hard boil, and at this point be sure to stir constantly to prevent burning. Boil hard 1 minute. Remove from heat. Skim off the foam if necessary.

Ladle hot jam into jars, leaving 1/4 inch headspace. Wipe rim and threads of jar with clean damp tea towel. Put lid on jar and screw band on finger tight. Process 10 minutes in a boiling water canner. Yields about 6 half pints.

  • Pectin Counts!
    Don't use another brand or type of pectin than the one listed above. It may work, but it may not.
