Banana Bread

Yet another recipe with mysterious origins. I found it in my daytimer. I copied it out of a recipe book at some point.

Ingredients

  • 2 1/2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/4 cup softened butter
  • 2 eggs
  • 1 1/2 light brown sugar
  • 3 cups ripe mashed bananas (about 7)
  • 1 teaspoon vanilla
  • 1 cup nuts (optional)

Bread is the Staff of Life

Preheat oven to 325 degrees. Grease two 9x5 loaf pans, set aside.

Combine flour, soda, salt in small bowl. Set aside.

In large bowl, cream butter with sugar using electric mixer. Add eggs, bananas, and vanilla. Beat until thick. Add flour mixture and nuts, blend until combined.

Bake 60-70 minutes, until toothpick inserted into center comes out clean and the bread pulls back from the pan.

Notes and Hints and Stuff

  • I hate nuts.
    If you don't like nuts, don't use them. But it's kind of boring without them.
