Blackberry Jam Pudding

I can't help it, I love puddings and custards. This one came from the Samples Plantation Bed and Breakfast Inn in Greenville, Georgia. Snide comments are mine, of course.

Ingredients

  • 4 eggs
  • 1 cup sugar
  • 1 cup blackberry jam
  • 1 cup sweet milk
  • 1 1/2 cups flour (self-rising)
  • 1 teaspoon backing powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Heat oven to 350. Beat eggs until light and fluffy, beat in sugar and jam. Combine the dry ingredients in a bowl, stir in the milk, add to the eggs. Stir well, pour into buttered casserole dish. Bake for 30-40 minutes. Serve warm with sweet cream.

Notes and Hints and Stuff

  • Mmmm, blackberries.
    If you're feeling particularly energetic, make your own jam first, in August, and then make the pudding.
