I can't help it, I love puddings and custards. This one came from the Samples
Plantation Bed and Breakfast Inn in Greenville, Georgia. Snide comments are
mine, of course.
Ingredients
- 4 eggs
- 1 cup sugar
- 1 cup blackberry jam
- 1 cup sweet milk
- 1 1/2 cups flour (self-rising)
- 1 teaspoon backing powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg

Heat oven to 350. Beat eggs until light and fluffy, beat in sugar and jam.
Combine the dry ingredients in a bowl, stir in the milk, add to the eggs.
Stir well, pour into buttered casserole dish. Bake for 30-40 minutes. Serve
warm with sweet cream.
Notes and Hints and Stuff
- Mmmm, blackberries.
If you're feeling particularly energetic, make your own jam first, in
August, and then make the pudding.
