Buttermilk Waffles

Your basic, boring, run of the mill waffle batter.

Ingredients

  • 2 cups sifted all-purpose flour
  • 1/4 tsp baking soda
  • 1 1/3 teaspoons baking powder
  • 1 Tbsp granulated sugar
  • 1/2 teaspoon salt
  • 2 eggs, separated
  • 1 3/4 cups buttermilk
  • 6 Tbsp melted butter

Better Than Pannycakes Even

Preheat the waffle iron.

In a large bowl, sift the flour, baking soda, baking powder, sugar and salt together.

In a medium bowl, beat the egg yolks until light. Mix in the buttermilk and melted butter, beat well.

Pour the liquid ingredients into the dry ingredients and combine quickly.

In another clean bowl with clean dry beaters, beat the egg whites until stiff but not dried out, and fold gently into the rest of the batter.

Pour the batter into the waffle iron, and bake until brown.

    For comparison sake, this waffle batter yields 313 calories per waffle, and 14 grams of fat, which is about the same as any homemade waffle.
