This was a Weight Watchers recipe originally. It's not really incredibly healthy or low cal, but it's better than a "normal" creme brulee! Plus, chocolate!
Ingredients
- 3 large eggs
- 1 large egg yolk
- 1 1/2 cup sugar
- 3 Tbsp unsweetened cocoa
- 1 oz unsweetened baking chocolate
- 2 cups fat-free creamer (fat-free 1/2 and 1/2, etc.)
- 1 tsp vanilla extract
- 1/4 cup water
Pseudo-Weight Conscious
Position rack in center of oven and preheat to 300 degrees. Place eight 2/3-cup souffle dishes or 3/4-cup custard cups (ramekins) in a large roasting pan. Add 1" of water to the bottom of the pan and set aside.
In a medium bowl, combine eggs, egg yolk, and 1/2 cup sugar. Whisk thoroughly.
In a small saucepan, combine cocoa, baker's chocolate, and creamer. Heat over medium heat until chocolate melts and the mixture steams, approximately 4-5 minutes. Pour slowly into the egg mixture, whisking constantly. Add vanilla.
Divide between custard cups. Bake the pan of custard cups about 1 hour and 15 minutes, or until the custards barely move when the edge is shaken lightly. Remove from oven and chill overnight.

When the custard cups are cool and you're ready to serve, mix 1 cup sugar with 1/4 cup water in a small saucepan. Cook on medium heat, gently swirling pan occasionally, until the sugar dissolves. Increase heat to high, and continue cooking until the mixture turns golden. Stir occasionally. Remove pan from burner, place bottom of pan in cold water to stop the caramelization process.
Coat a tablespoon with cooking spray (like Pam). Drizzle 3/4 tablespoon of caramelized sugar over each custard cup, tilting to spread evenly. Serve immediately.
Notes and Hints and Stuff
- Don't Scramble Your Eggs
When you're combining the hot mixture with the egg yolks, be patient. Go slowly or you'll scramble the eggs and have to start over. I've done this.
