Cinnamon Almonds

My aunt Linda sent me this recipe. I made them for my wedding, and Shawna made them for hers. Pretty darn easy, and they keep relatively well, too.

Ingredients

  • 1 lb raw almonds (or pecans or walnuts)
  • 1 egg white
  • 2 Tablespoon cold water
  • 1 cup white sugar
  • 1 Tablespoon cinnamon
  • 1 teaspoon salt

Mmm. Nuts.

Whip the egg white and water until very frothy. Mix in the nuts. In another bowl, combine the sugar, cinnamon and salt. Pour the frothy soggy nuts into the sugar mixture. Coat very well. Pour onto a greased baking sheet and bake at 275 degrees for 45 minutes, stirring every 15 minutes.
