Amazingly simple, yet amazingly popular. I first tried this recipe when I bought some candy molds at the Puyallup Fair. People ask for them every year at the holidays.
Ingredients
- 8 oz cream cheese
- 1 bag (2 lbs) powdered sugar
- 1 teaspoon lemon extract
- yellow food coloring
- granulated sugar
Easier than Rice Krispie Treats!
Put the cream cheese into a bowl, and beat with a hand mixer for a minute or two, until softened. Slowly add the powdered sugar until mostly mixed, then knead by hand until all the sugar is mixed in and the dough is soft and workable. Add the extract and 1-3 drops of food coloring.
Pinch off 1" balls, roll in granulated sugar, and press into candy molds. Invert on waxed paper, let dry for an hour. Store in containers in fridge or freezer.

I've never tried anything but lemon, but that doesn't mean it wouldn't work. I suspect fruit flavors will work better than others, but mint might be nice as well.
- No candy molds?
Horrors! How can you not have candy molds? (Like normal people have candy molds. I'm a freak, I know.) Fortunately, you can just use a fork and mash the little balls of dough down to create a crosshatch pattern. It works just as well, and I'm pretty sure no one even noticed that mine were shaped like owls and frogs and roses and things before stuffing them in their faces.
