Fondant Stuffed Dates

I hate these things. I hate dates. But they're fairly popular anyway.

Ingredients

  • 4 1/2 cups powdered sugar
  • 2/3 cup sweetened condensed milk
  • 1/4 teaspoon salt
  • 1 1/2 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • 1 1/2 pounds pitted dates

Sticky Messy Fun

Pour the milk into a medium sized bowl. Gradually add 4 cups of sugar, blending well, until a stiff dough forms. Using your hands, blend in the salt and extracts. Sprinkle the rest of the sugar on a cutting board, and knead the dough until creamy and smooth. Wrap in foil, put in refrigerator for 24 hours to ripen.

Stickier, Messier Fun

Slit the dates through one side, using a knife or utility shears. Your fingers will get very datey, so slit all of the dates before beginning the stuffing process.

Remove the fondant from the fridge, roll 1/2" balls, elongate slightly, and place in the center of the slit date. Allow some of the fondant to peek out through the slit.

Notes and Hints and Stuff

  • Thoroughly Examine the Inside of the Dates
    Particularly if you are buying them in bulk. There can be unpleasant suprises waiting for you. You don't want to know how I know this. Just trust me.
