English Butter Tarts

I have no idea why they're called Butter Tarts, considering there's no butter IN the stupid things. They're pretty good, though.

Ingredients

  • 24 unbaked tart shells (2")
  • 1 cup packed brown sugar
  • 1/2 cup shortening
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/2 cups raisins

    If you don't have access to unbaked tart shells, see the Pecan Tassies recipe for a basic tart dough for 24 tartlets.

    Preheat oven to 400 degrees.

    Distribute the raisins evenly amongst the tartlets.

    In a large bowl, combine the rest of the ingredients. Mix until well combined and smooth, and divide evenly over the raisins in the tart shells.

    Bake for 12-15 minutes. Watch carefully to keep from overbaking and burning.

    Notes and Hints and Stuff

    • Unbaked Tart Shells?
      You can probably get unbaked shells in the frozen pastry section of the store. The original recipe called for arranging the shells on a baking sheet. If you use the Pecan Tassie tart crust, you will have to leave them in the tartlet pans, as the dough is quite squidgy.
