I got the basic alfredo sauce recipe from allrecipes.com, then fudged with it some. I think it came out pretty well. Caution: Not For The Heart Smart.
Ingredients
- 24 oz dry fettuccini noodles
- 3/4 pint heavy whipping cream (1 1/2 cups)
- 1/2 cup grated parmesan
- 3/4 cup grated romano
- 1 1/4 cup butter
- several cloves of garlic, minced or pressed
- 1/4 lb bay shrimp, cooked
- 1/4 lb scallops
- 1/4 lb crab meat (or krab)
- garlic salt
- salt and pepper>
Noodling Along
Put on a large pot of water to boil. Add a dash of olive oil if you like (I
usually do) and some salt. When it reaches a boil, add the fettuccini noodles and cook al dente (about 10 minutes). Drain.
I Sea Food
In a large skillet on medium heat, melt 1/4 cup butter.
Add a couple of cloves of minced or pressed garlic, to taste, and some garlic salt if you wish. When it is hot and bubbling, add the scallops. Cook until tender and no longer translucent. (2-5 minutes). Turn to low heat, add the shrimp and crab. Let simmer on low while finishing the sauce.
Getting Saucy
In a large saucepan on low heat, melt 1 cup butter into the cream until smooth. Turn to medium heat, and slowly add the cheese until melted. Stir constantly. This will thicken the sauce. Add minced garlic, garlic salt, and salt and pepper to taste. (1/4tsp salt, 1/4tsp pepper, and 2-3 cloves of garlic would be fairly "average").
Atsa Pasta!
Add the seafood to the sauce, stir gently, and add the noodles to the sauce.
Toss, and serve immediately.
Notes and Hints and Stuff
- What is Al Dente?
To the tooth. Means cooked, but firm and with bite. Usually I just eat a
piece to see if I like the texture. I have a friend who flings the noodles at the ceiling. If they stick, they're done. YMMV.
- That's A Lotta Pasta
Yes, yes it is. By the package directions, 24oz of fettuccini is 12 servings. But it keeps well if you freeze or refrigerate it, or you can cut the recipe in half if you want. Or just eat too much. That works too.
- But I Don't Like Seafood
Whiner. No, seriously, just leave the seafood out. It would work with strips of broiled chicken or a salmon filet too. The basic sauce is just alfredo sauce with garlic. Try mushrooms, or leeks, or whatever you want.
