Milk Chocolate Florentines

Also known as "lace" cookies. It takes a bit to get the "doneness" just right, but they're great when you do!

Ingredients

  • 2/3 cup butter
  • 2 cups quick oats
  • 1 cup sugar
  • 1/4 cup corn syrup
  • 1/4 cup milk
  • 2/3 cup flour
  • 1 tsp. vanilla

Kinda Like Oatmeal

In a large saucepan, melt the butter over medium heat. Add the oats, sugar, corn syrup, milk, flour, and vanilla. Stir until smooth. It should be about the consistency of really thick oatmeal.

Alien Cookies

Line two cookie sheets with tinfoil. Drop the dough onto the tinfoil by scant teaspoonfuls, at least 3 inches apart. Flatten with a spatula. Bake at 375 degrees for 5-7 minutes, or until they are brown around the edges and kind of holey in the middle. (They look just like these cookies I saw once in an Unexplained Phenomena book. A hick farmer claimed aliens made him these little cookie like pancakes before going back to the Mother Ship.)

Sandwich Goodness

Remove the tinfoil from the cookie sheets and set on the counter. Cool completely. When cool, peel off the tinfoil (if you're careful, you can make 2 sheets of tinfoil last for the whole batch). Cookies should be flat and crispy.

Pour the milk chocolate chips into a microwave safe bowl. Microwave on high for 1-2 minutes or until melted. Stir until smooth. To make the cookies, take one cookie, spread chocolate on the back side, and top with another cookie. Claims it makes 3.5 dozen, but I'd bet on more like 2 dozen unless you make them super small.

Notes and Hints and Stuff

  • Is It Done?
    The cookies should be brown on the edges and not doughy looking in the middle. You have to watch them...only a minute or so is the difference between cooked and burnt here.
  • Get Real
    Once again, use REAL butter. Don't use margarine. Real milk chocolate will make a difference too, but the butter is the key part to get real about here.
