Big honkin' Fortune Cookies. These would make great favors for a reasonable-sized party, or gifts, or office treats.
Ingredients
- 6 Tbsp butter or stick margarine, softened
- 1/3 cup sugar
- 2 egg whites
- 1/2 tsp almond extract
- 1/2 tsp vanilla extract
- 2/3 cup all purpose flour
- 1/4 cup semisweet chocolate chips
- 2 ounces white candy coating
- Sprinkles (optional)
Fortune Cookies Rule
Write fortunes or sayings or something on 10 strips of paper measuring 5 inches long by 3/4 inch wide. Fold in half and set aside.
Line a baking sheet with parchment paper, and draw two 5 inch circles on the paper. Be a real geek, use a protractor, you know you want to. Set aside.
In a mixing bowl, combine the butter, sugar, egg whites and extracts. Beat well. Add the flour, and mix well until thoroughly combined. Spread 2 tablespoons of the batter over each circle. Bake at 400 degrees for 6-7 minutes or until lightly browned.

Working with one cookie at a time, carefully peel off the parchment paper using a thin spatula. Keep the other cookie warm by covering with a clean towel. Place a fortune in the center of the cookie, fold cookie in half so the edges meet. Press edges together for 3 seconds. Put the middle of the folded cookie over a glass, and gently press down to bend in half. (You know what a fortune cookie should look like. Do that.) Let cool on the glass for one minute, then place on wire rack.
Repeat with remaining cookie. If the cookies get too cool to fold, return to oven for 1 minute. Repeat the entire process with the remaining batter. Recipe yields 10 cookies.
To decorate the cookies, melt the chocolate chips in a small bowl in the microwave. Drizzle over the cookies, or dip half a cookie in the chocolate. Melt the white candy coating in another small bowl, also in the microwave. Drizzle with white candy coating in a decorative pattern. Get artistic. Add sprinkles. Write names. Use other colors of candy coating pieces. Go wild. Yee haw.
Each cookie is 172 calories, 10g fat, 1g fiber, 20mg cholesterol. Not good for you, no, but oh so tasty...

You could make "misfortune" cookies, and color them with black frosting. Or slip random notes inside them. Use them as a jumping-off point for a game by putting character sheets inside. Ooh, I sense a Team Building Moment!
