Fruit Pizza

Ingredient list stolen shamelessly off the internet. This is from the White Orchid, a Bed and Breakfast in Flagler Beach, Florida.

Ingredients

  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 3/4 + 2 Tablespoons sugar
  • 3 Tablespoons milk
  • 1/2 cup oil
  • 8 oz cream cheese
  • 1/2 Tablespoon orange rind
  • 1/2 Tablespoon lemon rind
  • 1 pint whipping cream
  • 2 Tablespoons corn starch
  • 1/2 cup orange juice
  • 1/4 cup lemon juice
  • 1/4 cup water
  • Fruit. Strawberries, bananas, kiwi, peaches, tangerines...you know what fruit is, right? You can use fresh or dried.

Crust

Mix flour, salt, 2 Tbls sugar, 2 Tbls milk, and oil by hand or with a pastry blender. Spread evenly into an ungreased pizza pan (12 inch tart or pizza pan.) Bake 15 minutes at 375 degrees until it is a deep golden brown. The crust must be completely cooled before filling.

Filling

Whip cream cheese in a food processor until it is fluffy and has no lumps. Add 1/4 cup sugar, 1 Tbl milk, the orand rind, and lemon rind, and mix until well blended. Add cream, whip until thick. Spread mixture evenly on the cooled crust.

Fruit

Slice the fruit and lay it on top decoratively, or if you're lazy, chop it up and sprinkle it on like a "pizza supreme". Layers are pretty, though.

Glaze

Combine corn starch with 1/2 cup sugar. Stir in water, orange juice, and lemon juice, bring to a boil. Stir constantly to avoid burning. Boil and stir for one minute, or until mixture looks clear. Remove from heat, spoon evenly over fruit.

Notes and Hints and Stuff

  • I want a bigger pizza
    Okay. For a 14 inch pan, use 1.5 times the crust recipe and filling recipe. For a 16 inch pan, double the crust and filling, and use 1.5 times the glaze.
