This is one of those "quick fix" meals that doesn't exactly come from scratch unless you want it that way. Mostly it's something to put together quickly when you don't know what to make!
Ingredients
- 2 chicken breasts
- 1 roll of Pillsbury (or other brand) pizza dough OR
- 1 Boboli (or other brand) pre-cooked pizza shell OR
- dough from scratch to make one pizza crust
- 3 heads of garlic
- 1 can of artichoke hearts
- shredded Italian cheese (mozzarella, provolone, parmesan)
- olive oil
- red pepper flakes (optional)
Have the Mints Handy
Cut the pointy ends off the garlic, and pour a little olive oil on them. On a piece of foil, turn the bulbs face down. Wrap with the foil, and bake at 350 for about 45 minutes or until the innards are soft. Carefully unwrap, and using a double or triple layer of paper towels to protect your fingers, squeeze a bulb's contents into a bowl. Repeat with the other two bulbs. Mash with a fork until you have a garlic paste, and add a pinch of two of red pepper flakes if desired.
In a frying pan, heat a tablespoon of olive oil, and cook the chicken breasts on medium until done. Slice thinly, or chop into bits, as you prefer.
Spray a cookie sheet with nonstick cooking spray, and roll out the dough. (Or, place the baked pizza shell on the cookie sheet.) Spread evenly with the mashed garlic. Add the chopped or sliced chicken. Drain the artichoke hearts, add those evenly to the pizza.

Use cooked chicken breasts; roast your own garlic; make the dough fresh; and grate your own cheese blend.
- Less From Scratch
Buy precooked, sliced chicken meat in the deli section; use pre-roasted garlic (available in containers in the "garlic" section) and throw it in a food processor with olive oil and red pepper flakes to make a paste; buy Boboli shells or premade dough; buy packaged shredded Italian cheese blends (one 2-cup pack will suffice.)

If you want to use fresh chicken but don't want to roast your own garlic, that works. Or if you want to buy the cheese pregrated but make the dough fresh, that works too. It's just really a basic recipe.
