Amish Gingerbread Men

My aunt and uncle sent me this recipe for Xmas 2001. I finally made them for Xmas 2002. They're good, and boy are they spicy!

Ingredients

  • 1 cup margarine
  • 1 cup sugar
  • 1/2 cup dark molasses
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. ginger
  • 1 tsp. cloves
  • 2 eggs
  • 1 tsp. vinegar
  • 5 cups flour
  • 1 tsp. baking soda
  • Raisins and cinnamon candies

Run, run, as fast as you can...

In saucepan, cream margarine with sugar. Add molasses and spices. Mix well. Bring to boil, stirring constantly. Remove from heat and cool.

Do you know the muffin man?

Beat the eggs well. Stir into cooled molasses mixture. Add vinegar. Sift flour and baking soda together in small bowl, stir into molasses mixture to form a smooth dough.

Chill several hours. Roll out dough and cut with gingerbread people cutters. Garnish with raisins and cinnamon candies. Bake at 350 degrees for 8-10 minutes. Makes 3 dozen.

Notes and Hints and Stuff

  • Don't Touch
    The more you work dough, the tougher it gets. Try to cut as many cookies as you can from each rolling, and only handle it enough to re-roll it.
  • Against My Nature
    This is one of the few times I will tell you to use margarine, not butter. Butter makes the dough very very stiff after refrigeration. It is possible to work with butter, but margarine works much better for this recipe.
