Gingerbread Oven Pancake

This used to be my "invite him over for brunch and impress him with your cooking" recipe. I haven't made it in ages.

Ingredients

  • 1/2 cup skim milk
  • 3 large eggs
  • 2 Tbsp molasses
  • 1 1/2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup flour
  • 1/4 cup plus 2 Tbsp packed brown sugar
  • 1 1/2 cup fresh sliced apples or peaches
  • 2 Tbsp butter

Make The Kitchen Smell Divine

Preheat the oven to 425.

In a large bowl, whisk together the first 6 ingredients. Mix in the flour and 1/4 cup of the brown sugar until well blended. Set aside.

Peel and slice the fruit. Place the rack on the bottom rung of the oven. Melt the butter on the stove in a large, ovenproof skillet. Add two tablespoons of brown sugar, cook and stir until it bubbles and melts. Add the fruit, stir to coat. For peaches, cook 30 seconds. For apples, cook about 5 minutes, or until they begin to soften.

Whisk the batter briefly to recombine, then pour over the hot fruit. Put the entire skillet in the oven, and bake 18-20 minutes or until it is puffy and the sides are crisp. Serve warm with whipped cream, powdered sugar, or ice cream.

Notes and Hints and Stuff

  • What Kind of Apples?
    I prefer a nice tart apple like Granny Smith with these, but YMMV.
