Gingerbread Waffles

My husband is actually the wafflemaker in the family. I think he cut out this recipe originally...

Ingredients

  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1 Tbsp ground ginger
  • 3/4 tsp cinnamon
  • 1/2 tsp dry mustard
  • 1/4 tsp ground cloves
  • 1/4 tsp grated nutmeg
  • 3/4 cup firmly packed dark brown sugar
  • 1 1/2 cups buttermilk
  • 1/4 cup unsulfured molasses
  • 2 eggs, separated
  • 4 Tbsp unsalted butter, melted

I Am The Waffler! Golden Crispy, Bad Guys Are History!

Preheat the waffle iron.

In a large bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, mustard, cloves, nutmeg and brown sugar. Combine thoroughly.

In a small bowl, whisk together the buttermilk, molasses, and egg yolks

In yet another bowl, with a clean, dry beater, whip the egg whites until they hold stiff peaks.

Blend the buttermilk mixture into the dry ingredients with a whisk. Stir until combined. Add the melted butter. Very gently, fold in the egg whites.

Pour the batter into the iron, bake until very dark brown. Serve immediately.

Notes and Hints and Stuff

  • My Waffle Is Limp
    Make the waffles very thin, and use a spatula to spread the batter instead of relying on the iron to squish it out. Bake until very dark brown.
