I don't know if this is a historically accurate recipe, or if it's medieval,
or what. Didn't really care. I was just looking for something for my
wedding. I don't even know where this came from.
Ingredients
- 1 pound butter
- 1/4 cup brown sugar
- 1 pound flour
- 3 1/2 pounds currants
- 2 1/2 pounds raisins
- 1/2 pound citron
- 10 eggs
- 1/2 Tablespoon nutmeg
- 1/2 teaspoon baking soda
- 1/2 cup molasses
- 1/4 cup water
- 1/2 Tablespoon mace
- 1/2 Tablespoon cinnamon
- 1/4 Tablespoon crushed cloves
- 1/2 cup crushed walnuts
Bakin' and Cakin'
Preheat oven to 250-300. (It simply specifies a slow oven.)
Cream the butter together with the eggs and sugar, using a hand mixer.
Add water and molasses, stir. Sift flour, soda and spices together,
then add to the batter slowly, stirring to combine. Stir in the fruits,
and add any other spices you might like. Pour into prepared pans
and bake until a knife inserted in center comes out clean, approximately
40 to 50 minutes.

I made a bundt pan and a loaf pan out of this. It's not my favorite recipe, but then I'm not a big fan of fruitcakes.
