Since I'm not getting any younger, and I'm trying to get thinner, I've been working on coming up with some healthier options for dinner. This is one I threw together after discovering the goodness that is ground turkey. Even if you aren't a big poultry fan, if you like ground meat tacos, you should like this, and it's super super easy and fast. Move over, Rachel Ray, I'm gunnin' for you!
Ingredients
- 1 lb lean ground turkey
- 1 small yellow onion, diced
- garlic cloves, chopped
- 1 Tbsp EVOO (Extra Virgin Olive Oil, for those not into 30 minute meals)
- 1/2 package of taco seasoning, brand of your choice
- 1 can reduced sodium black beans
- 1 can diced tomatoes
- 1 small can tomato paste
- crushed red pepper flakes
- paprika
- tortillas
- fat-free sour cream
- taco toppings
Let's Talk Turkey
In a large skillet, heat the EVOO on medium heat. Throw in the diced onion and saute a few minutes, until the onions begin to get a little transparent. Add the chopped garlic, and saute a few more minutes. Do not let the garlic turn brown and crispy, or it will get bitter.
Add the ground turkey, and cook until browned. You shouldn't have to drain it if you're using lean turkey. Add the taco seasoning now. I find 1/2 packet does the trick, but it's up to you. You can also add a pinch of crushed red pepper flakes for a little kick, and some paprika.
When the turkey is all browned, drain the black beans and add them to the skillet. Add the chopped tomatoes and tomato paste, and stir thoroughly to combine. Simmer until hot, or let hang out for a while so the flavors blend better. If it starts to look a little dried out, add a splash of water.
Some Assembly Required
Assemble like soft tacos, with a scoop of taco filling on a tortilla. Top with fat-free sour cream, lettuce, cilantro, chopped tomatoes, chopped onion, shredded fat-free cheese, or whatever floats your boat.
This recipe is 4 Weight Watchers points per serving. Makes six servings. Does not include toppings or tortillas.
Notes and Hints and Stuff
- You missed the garlic measurement
No, I didn't. I throw in a couple of tablespoons of chopped garlic, which is about an entire bulb. Some people like more, others less. Your choice.
- I'm not watching my waist
Lucky you. But hey, everyone should eat healthier, right? However, if you insist, you can substitute:
- Lean ground beef instead of turkey
- Kidney, pinto, white, or navy beans for black beans
- Regular sour cream for fat-free
- I am on Weight Watchers, more info?
If you add 1 Tbsp fat free sour cream, you don't add any points. Lettuce, cilantro, chopped tomatoes and chopped onions are free too. If you look at the store, you can get "Carb Smart" Mission brand tortillas that are small, but only 1 point each. Find the tortillas with the lowest calories and highest fiber if you can't find Carb Smart Mission tortillas. If you make this recipe with other kinds of beans, or with regular (vs. lean) ground turkey, the points will also be different. Kidney beans instead of black beans makes this recipe 5 points per serving.
