Anyone ever eat Sunkist Fruit Chews? I loved these things, and I took a whole box with me to the hospital when I went into labor, just for the comfort factor. These are a similar idea.
Ingredients
- 1 package Ball Fruit Jell liquid pectin
- 1 Tbsp water
- 1/4 tsp baking soda
- 1/ 1/2 cup sugar
- 1/2 cup corn syrup
- 1 packet flavored unsweetened drink mix
- 1 tsp water
Ooey Gooey Chewies
Prepare an 8x8 square pan by coating the bottom and sides with cooking spray.
In a medium sized saucepan, combine pectin, water, and baking soda. Over medium high heat, cook and stir until the foam settles.
Remove from heat. Add sugar and corn syrup, stir well until sugar is all dissolved.
In a small glass, dissolve the drink mix in 1 teaspoon water, then combine into the hot mixture. Return to heat, turn up to high and bring to a full rolling boil while stirring constantly. Boil hard for 1 1/2 minutes. Remove from heat. Keep stirring until the boiling stops. Pour the mixture into the 8x8 pan, and cool on the counter until firm (put in fridge if you want to speed it up.) Be sure the pan is level so the jelly settles flat!
Jelliferous
Run a knife around the edges of the pan, and invert onto a cutting board coated with a layer of sugar. Cut out shapes using small cookie cutters, and roll in additional sugar to coat. If the cutters stick, spray lightly with cooking spray before using. Eat, or store in an airtight container.
Notes and Hints and Stuff
- Get Really Fancy
These can be decorated using plain icing, if you want. Use drink mixes in holiday colors (red, pink, or clear for Valentine's day, orange or grape for Halloween, green or red for Christmas, etc.) and cut with holiday cutters for a fun holiday candy.
