Handfasting Cake

This recipe came originally from Gerina Dunwich, though I've slightly altered the ingredients, and the commentary and instructions below are my own. This cake was designed for use in handfasting ceremonies. Look it up if you have to ask.

Ingredients

  • 1 cup butter
  • 1 cup sugar
  • 1/2 cup honey
  • 5 eggs
  • 2 cups flour
  • 2 Tablespoons grated lemon rind
  • 2 1/2 teaspoons lemon juice
  • 1 teaspoon rose water

Cake for a Year and a Day

Preheat oven to 350 degrees.

In a large bowl, cream butter and sugar together with a hand mixer until they are fluffy. Add the honey, beat well. Add the eggs one at a time, beating well after each one. Add the flour slowly, and beat using a wooden spoon. (Your mixer will get too tired.) Stir in the lemon rind, lemon juice, and rose water.

Grease a 9x5x3 loaf pan, and pour in the batter. Bake for 75 minutes. Remove when done, and let stand until cool. Sprinkle sugar on top, or drizzle icing on, just before serving.

    Yeah? So? Double it. Pour it into a bundt pan. It's all good, it's a really basic recipe.
