Honey Roasted Almonds

This is a modern-but-coulda-been-medieval recipe. I sucked it off the web for my wedding. I actually prefer the Cinnamon Almonds myself, but these are good.

Ingredients

  • 2 cups whole almonds
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 2 Tablespoons honey (use something good!)
  • 2 Tablespoons water
  • 2 tsps almond or vegetable oil

Just Slightly Nutty

Spread the almonds out on a baking sheet, single layer. Place in a cold oven. Turn the oven on to 350 degrees. Open the oven occasionally to stir the nuts. Only bake 12 to 15 minutes...bear in mind that the nuts may not look totally roasted, but if you wait until they look it, they'll taste burnt. Set aside.

Mix the sugar and salt in a small bowl. In a medium saucepan, combine the honey, water, and oil, and bring to a boil over medium heat. Stir in the roasted almonds, and keep cooking and stirring until there is no liquid left, about 5 minutes.

Put some of the sugar/salt mixture into a medium bowl. Transfer the hot sticky almonds to this sugared bowl. Sprinkle the rest of the sugar mixture over the almonds and toss until they are coated. Spread out on waxed paper.

When cool, they'll keep 2 weeks at room temperature, preferably in a tightlyclosed container.

Notes and Hints and Stuff

  • What, no spices?
    My aunt sent me a slightly different version of this (see comment above,) which uses egg whites and has cinnamon in it. I made both for my wedding. This is basically candying the nuts...the other recipe is spiced nuts.
