Irish Creme Cake

This recipe came to me from my aunt Linda. It's a bit on the dry side for a cake, but it's tasty and not too sweet. I added the glaze because it needed something extra. It's now the Dessert Of Choice at most family gatherings, and my father can make one in about 8 minutes flat.

Ingredients

  • 1 box Yellow Cake Mix
  • 4 oz instant chocolate pudding mix
  • 3/4 cup oil
  • 4 eggs
  • 1/4 cup water
  • 1/2 cup plus 2 Tablespoons Irish Creme Liqueur
  • powdered sugar
  • hot water
  • 1/2 cup melted chocolate chips

Make a Cake

Preheat oven to 350 degrees. Grease and flour regular bundt pant. Mix cake mix, pudding mix, oil, eggs, water, and 1/2 cup Irish Creme together in a large bowl. Mix 2 minutes on medium speed with hand mixer. Pour into greased and floured bundt pan. Bake for 45-50 minutes until a toothpick inserted halfway between edge and middle comes out clean. Cool 10 minutes. Turn out onto rack, cool completely.

You Have a Glazed Look In Your Eye

In a small saucepan, melt the chocolate, add 2 Tablespoons irish creme. Add powdered sugar and hot water until it drizzles easily. (It's not exact.) Drizzle over cooled cake.

Notes and Hints and Stuff

  • I Don't Have a Bundt Pan
    I have never tried this in a non-bundt pan, but see no reason it shouldn't work. Do pay more attention to the cooking, though, it will probably be a different timing than this recipe gives.
