Kah-Nee-Tah Fry Bread

This recipe came from my one and only trip to Kah-Nee-Tah, on the Warm Springs Indian reservation in southern Oregon. It's from about 1983.

Ingredients

  • 3 cups flour (white, or 1/2 whole wheat)
  • 1 Tbsp baking powder
  • 1 Tbl sugar
  • 1/2 tsp salt
  • 2 cups buttermilk
  • oil for frying

Kah-Nee-Tah Means "Casino Here"

Mix the flour, baking powder, sugar, and salt together in a medium bowl. Stir in the buttermilk until a wet, stiff dough forms.

Heat the oil in a deep kettle or deep fryer to 350 degrees. With floured hands, break off 1 1/2 - 2" pieces of dough out slightly, lay on hot oil. Fry until puffy, about 1 minute. Turn and fry the other side until it's golden. Drain on paper towels, and serve warm.

Notes and Hints and Stuff

  • Just Pat Slightly?
    This makes more of a puffy little biscuit or donut than a flat fry bread, but it's still really good.
