Lilith's "I'm Really Lazy" Lasagna

This is NOT a gourmet lasagna recipe. This is instruction in making a fast lasagna for when company is coming and you are too busy to cook, or when you need to make food for many. Sigh. Now everyone will know my secret shame.

Ingredients

  • 1 box wide lasagna noodles
  • 1 pound ground beef
  • garlic
  • 1 small onion, chopped
  • 1 jar of premade spaghetti sauce, your favorite flavor and brand
  • fresh mozzerella cheese, about 1/2 a normal "lump"
  • ricotta cheese (one small container)
  • can of medium olives
  • can of mushrooms
  • oregano, Italian seasonings

Make Lasagna, Take a Nap

Preheat oven to 350. In a baking pan or lasagna pan, put a layer of dry lasagna noodles.

In a skillet, pour a bit of EVOO to coat the bottom, then saute the chopped onion. When it's translucent, add the garlic, cook a minute or two, then brown the beef in this mixture. When the beef is brown, pour in the jar of spaghetti sauce, and about half a jar full of water. Stir.

Pour some of the sauce mixture over the dried noodles. Then throw on some of the olives and mushrooms. Throw on a few scoops of the ricotta cheese. Grate on some mozzerella. Dust with oregano and Italian seasonings.

Second layer: Same as the first, and add the rest of the liquid from the mushrooms and olives.

Final layer: End with a layer of noodles, some sauce, and grated mozzerella. Throw the oregano and seasonings on top.

You can let this sit in the fridge for several hours before baking. Bake for approximately an hour, or until the noodles are tender. Let rest for 10 minutes after removing from the oven before serving...it'll set up a little and make slicing it easier.

Notes and Hints and Stuff

  • Use disposable baking pans
    Those aluminum baking pans work great for lasagna pans. If you're taking it to a potluck, you don't have to worry about getting the pan back. If you're hosting a party, cleanup just got easier. If you're an EcoTerrorist, wash and recycle, or reuse later if you must.
  • Add other stuff
    Don't limit yourself to my boring ingredients. Try something else, like:
    • Browned sausage
    • Chopped green and red peppers
    • Chopped onion and garlic
    • Slices of salami or prosciutto
    • Other veggies
