Mmm. Mushrooms. I'm such a hobbit.
Ingredients
- 1/2 cup parsley
- 4 medium green onions, including green tops, cut into 1 inch pieces
- 1 medium lemon, scored, halved longwise, ends cut flat
- 32 large white mushrooms (about 2 lbs)
- 3 Tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/2 teaspoon dried basil
- freshly ground pepper
- 1/2 pound curly endive
- red wine vinegar
Too Many Mushroom Puns To Choose From
Mince parsley and onions. Slice lemons and mushrooms into slices. Add the oil, mushrooms, and everything else except the endive and vinegar into a large skillet. Cook over high heat, tossing carefully with a wooden spoon, just until heated through, about 3-4 minutes. Remove from heat, transfer to an airtight container, cover with vinegar, and refrierate several hours or overnight. Drain well before serving.

- Other Mushrooms?
Have no idea if this would work with portabello or shiitake or other mushrooms. Might.
