I've always been afraid of mincemeat, but these are wonderful. I made them from canned mincemeat mix, which doesn't have any meat in it. You could do that, or you could get the kind that does have meat in it, or you could go find a recipe for mincemeat and make it yourself...
Ingredients
- 2 cups all purpose flour
- 1 1/2 ounces powdered sugar
- 2 teaspoons ground cinnamon
- 10 Tablespoons cold butter
- grated rind of one orange
- 2/3 cup mincemeat
- 1 beaten egg
- powdered sugar for dusting
There's no Meat In It.
Heat oven to 400.
Sift together the flour, sugar, and cinnamon. Cut in in the butter with a pastry cutter until it forms crumbs. Keep cutting until it resembles fine meal or little peas. Stir in the orange rind.
Toss in about 1/4 cup of ice water. Knead gently with your hands to get it all to stick, but don't overwork the dough. Roll out to 1/4-inch thickness.
Get a 2.5 inch round cookie cutter, and cut out 12 circles. Then gather the scraps and reroll, and cut out 12 smaller 2 inch circles. If you have more dough left, cut pairs of large and small circles until you're out of dough.
Line two regular-sized muffin pans with the larger circles, and press gently into the cups. Spoon a small amount of mincemeat into each pastry shell, top with the smaller pastry circles, pressing the edges lightly to seal. You can also wet the edges with water to help them stick.
Using a pastry brush, glaze the tops of the pies with the beaten egg and let rest in the refrigerator for 30 minutes. Bake for 15-20 minutes, until they are golden brown. Cool on wire racks, and then dust with powdered sugar. Serve just warmed.

- What Is Mincemeat?
It's a mixture of fruits like raisins and citron, sugar, nuts, and sometimes meat. You can get canned mix at the store with the other pie fillings and jello-type items.
