Party Salmon Balls

This is a good dish to bring to a party if you don't know what to take. It's not very complicated, and it looks pretty impressive. Of course, you can buy them at Hickory Farms for next to nothing...

Ingredients

  • 1 lb can salmon
  • 8 oz cream cheese
  • 1 Tbsp lemon juice
  • 2 tsp grated onion
  • 1 tsp salt
  • 1/2 tsp liquid smoke
  • 1/2 cup nuts
  • 3 Tbls snipped parsley

Something's Fishy

Heat the oven to 350.

Drain the salmon, and flake into a bowl. Remove skin and bones. Mix thoroughly with juice, onion, salt, and liquid smoke. Shape into a ball, roll in nuts and parsley, and chill. Serve with crackers or bread.

  • What Kinda Nuts?
    I usually use walnuts, but pecans work too. Peanuts, not so much.
