This is a family recipe from Todd's mom's family.
Ingredients
- 1 lb cubed pork ribs (2lbs country spare ribs)
- 8oz tomato sauce
- 3 chicken or beef bouillion cubes
- 16oz can of Mexican style tomatoes
- 2 or 3 chopped jalapeno peppers
- 1 teaspoon garlic salt
- 1 or 2 chopped garlic cloves
- 1 Tablespoon sugar
- pepper
- 1/2 medium onion, finely chopped
- 1 Tablespoon Worchestershire sauce
- 1 can diced green chiles
Pork, the Other White Meat
Brown pork in a pan. In a large pot or dutch oven, combine all the other
ingredients. Add the browned pork and simmer for 45 minutes to an hour.
Warm up flour tortillas, serve with shredded cheddar, sour cream, refried beans, onions, lettuce, tomatoes, avocado, and cilantro.
Notes and Hints and Stuff
- Feed The World
You can double, triple, or quadruple this recipe if you have a big enough pot. Also, you can leave out any of the chiles or peppers if you don't like really hot food. Or just reduce the amount of peppers/chiles.
- Time Keeps Tickin'
This stuff actually tastes better the second or third day. Cook for an hour, then refrigerate overnight, then reheat thoroughly on the stove before serving. Good times.
