I could have an entire section devoted to Pumpkin recipes...
Ingredients
- 1 cup vegetable oil
- 3 eggs
- 1 15oz can pumpkin puree
- 1 tsp vanilla extract
- 2 1/2 cups sugar
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground nutmeg
- 1 tsp ground allspice
- 1 tsp ground cinnamon
- 1 tsp ground cloves
- 1/4 tsp salt
- 1/2 cup chopped walnuts
My Favorite Thing About Fall
Preheat oven to 350 degrees.
Grease one 10" bundt or tube pan.
In a large bowl, beat the eggs well. Cream together with the oil, pumpkin, and vanilla.
In another bowl, sift together the flour, sugar, baking soda, nutmeg, allspice, cinnamon, cloves, and salt. Add the flour mixture to the pumpkin mixture and stir until just combined. Add nuts (optional). Pour the batter into the prepared pan.
Bake for 1 hour or until a toothpick inserted into the middle comso ut clean. Let cool for 5 minutes, then turn out and cool completely. Serve with whipped cream or ice cream.
Notes and Hints and Stuff
- Nuts Suck
So don't use nuts. You could throw in some white chocolate chips or semi-sweet chocolate chips if you felt like making it a sugar overload.
