Pumpkin Cookies

I got this recipe because my yard produced many pumpkins and I needed something to do with all of them.

Ingredients

  • 1/2 cup sugar
  • 1/2 cup butter
  • 1 egg
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup walnuts
  • 1 cup chocolate chips

I Am The Great Pumpkin

Preheat oven to 350 degrees.

Cream butter and sugar together, add the egg and blend well. Blend in pumpkin and vanilla.

In a smaller bowl, stir together the flour, baking powder, baking soda, salt, and spices. Add to pumpkin mixture and blend well. Add the nuts and chips (both are optional.)

Drop by teaspoons onto baking sheet. Bake for 15 minutes or until browned. Cool and eat!

Notes and Hints and Stuff

  • How do I puree pumpkin?
    There are a variety of ways. I find it easiest to slice the pumpkin in half around the middle, scoop out the seeds and stringy bits, then lay the halves face down in about 2" of water in a casserole dish, and microwave for about 20 minutes. If your pumpkins are too big, cut in slices instead of halves. You can steam it, too. Then just scoop out the pulp when it's cooked, and throw it in a blender or food processor to make it into a puree.

    Or go to the store and buy Libby's canned pumpkin. That works too.
