Roasting Garlic

Roasted garlic is a tasty, low-calorie alternative to buttering your bread. Roasted garlic cloves are also fabulous on pizza and in sauces. The best part is, roasting garlic is really easy.

Ingredients

  • One head of garlic, either regular size or Elephant garlic
  • Olive oil

Remove the white skin from the garlic clove. That's the papery bits on the outside. Don't peel the individual cloves, and don't separate them. Take a sharp knife and cut off about the top 1/3 of the head at the pointy end, and throw it away. You should now have many little flat ovally shaped cloves, and maybe a few still intact.

Drizzle 1 teaspoon olive oil over the cut cloves. Wrap the entire head in a bit of tinfoil. Bake with the cut side up in a 375 degree oven for 45 minutes to an hour, or until tender. The cut side should be just lightly golden. Cool for 5-10 minutes or until it can be easiy handled. Separate the cloves, and squeeze out the pulp. It comes out kind of like garlic toothpaste. You can also attempt to unwrap individual cloves at this point, but it's a bit messy.

You can bake multiple cloves at the same time, and you can make them ahead of time and simply reheat for a few minutes in the oven later.
