Shepherd's Pie

I suppose this would be more "Shepherd"y if it were made with lamb instead of beef. You could do that. I prefer beef. You could make it with ground turkey too, or if you're good with soy crumbles, that'd probably work too. Ground sausage would be nice, but I think of this as a less spicy dish so I don't use sausage.

This should probably be called Rancher's Pie. When you use game meats, it's called Hunter's Stew or Hunter's Pie. Whatever, it's pretty easy.

Ingredients

  • 2 lbs ground beef (or other ground meat)
  • olive oil
  • chopped onion
  • chopped/minced garlic
  • seasoning salt
  • salt and pepper
  • 1 package brown gravy mix, your brand
  • 1/2 cup (or more) shredded cheese
  • half a dozen button shrooms or so
  • Mix to make 5-7 servings of Mashed Potatoes
      I use Potato Buds, which requires:
    • 2 2/3 cup Potato Buds
    • 2 2/3 cup water
    • 1/3 cup milk
    • 1/4 cup butter or margarine

Mmm, Beefy

Preheat oven to 350. In a large skillet, pour a tablespoon or two of olive oil. Add chopped onion and minced garlic to taste. (I use about 1/4 cup of the former and a heaping tablespoon of the latter). Saute until soft and lightly browned.

Add the beef. Sprinkle with seasoning salt, regular salt and pepper. If you want, add garlic salt or onion salt. If you're cooking with sausage, add some Italian herbs. When it's mostly cooked, chop up the mushrooms into reasonable chunks and throw them in. Cook thoroughly, or until it's all brown, no pink. Drain off the excess fat.

Taters

Follow the directions on your mashed potato mix to make 5-7 servings of mashed potatoes. If you feel REALLY masochistic, you can boil and mash your own, but I find that mostly a waste of my time and effort for the results.

While you're boiling the water/milk for the potatoes, throw in some garlic if you want. When you add the boiling water to the potato mix, stir a bit and then throw in some cheese, if you want.

Get In The Kitchen And Make Me A Pie!

In a large, oven safe baking dish, pour the meat mixture and spread evenly. Top with the mashed potatoes, and smooth out to the edges. Sprinkle cheese over the top of the potatoes, and bake 10 minutes at 350. (It's already cooked, baking is just to melt the cheese and brown it a little).

Makes a whole hell of a lot more than two people can eat.
