Shortbread Tea Cakes

I found this somewhere, on the Internet I think. I'm not sure, as all that remains of the recipe is a set of scribbled notes on a yellow sticky. It's all done with arrows and shorthand, and the paper is thoroughly buttered. These are kind of dry cookies, very flaky, and would be good with afternoon tea. I suspect these are something like the British would think of as 'biscuits'.

Ingredients

  • 1/2 lb butter
  • 1 cup powdered sugar
  • 1 cup cornstarch
  • 2 cups flour

No, that's not a typo

Heat oven to 350.

Cream the butter and powdered sugar together until fluffy. Add the cornstarch (yes, a whole cup.) When it's all combined, add the flour 1/2 cup at a time. You may not need all 2 cups. Keep adding flour until the dough is stiff but not yet crumbly.

Roll out into small balls, place on cookie sheet, and smush with a glass or the bottom of a measuring cup. This made the cookies fracture at the edges when I did it, but they look kind of rustic that way, so I didn't really care.

If you like, sprinkle the tops with turbinado sugar. Then prick with a fork. Bake 20 minutes or until just turning brown. (Don't let them burn, it takes about 2 minutes past "done" to "burn".)
