Sweet Potato Casserole

Having discovered that I really like sweet potatoes, I've been looking for recipes. I made this for Thanksgiving, and it was yummy. It made good leftovers too. Mmm.
Ingredients
- 4 1/2 cups cooked and mashed sweet potatoes
- 1/2 cup butter, melted
- 1/3 cup milk
- 1 cup white sugar
- 1/2 teaspoon vanilla extract
- 2 eggs, beaten
- 1 cup light brown sugar
- 1/2 cup all-purpose flour
- 1/3 cup butter
- 1 cup chopped pecans
Get Whipping!
Preheat the oven to 350 degrees. Grease a 13x9 pan.
In a large bowl, combine the sweet potatoes, butter, milk, white sugar, eggs, and vanilla.
Stir until well mixed. Spread the mixture into the pan. In a small bowl, combine the brown sugar
and the flour. Cut in 1/3 cup butter using a pastry cutter or two knives, until the mixture is crumbly. Stir in the chopped nuts. Sprinkle the nut mixture over the sweet potatoes.
Bake for 25 minutes, or until golden brown.
Notes and Hints and Stuff
- I hate pecans.
So does my husband. Hazelnuts worked wonderfully. I imagine walnuts would be good too.
