Turkey Tortilla Soup

I don't make much soup. This recipe is from my Mother in Law.

Ingredients

  • 1 Tbsp olive oil
  • 1 clove minced garlic
  • 1 cup chopped yellow onion
  • 1 tsp chili powder
  • 1 tsp salt
  • freshly ground pepper
  • 1 tsp ground cumin
  • 1 tsp dried oregano or basil
  • 1 can diced green chiles, drained (4 oz)
  • 1 can crushed or diced tomatoes in thick puree
  • 4 cups turkey or chicken stock or broth
  • 2 cups cubed turkey
  • 1 cups corn kernels (or you can use beans)
  • 1/4 cup chopped parsley or cilantro
  • Monterey Jack cheese, grated
  • Broken tortilla chips

Post-Thanksgiving Turkey Stupor

Warm the oil in the bottom of a soup pot, over medium heat. Add onions, saute for five minutes. Add garlic, saute a bit longer. Add chili powder, salt, pepper, cumin, oregano and chiles, mix well. Add the broth or stock and tomatoes, and bring up to a boil.

Reduce heat, simmer uncovered 10 minutes. Add the turkey and corn (or beans) and parsley. Simmer until heated through, about 15 more minutes. Ladle into bowls and top with grated cheese and tortilla chips.

Notes and Hints and Stuff

  • What Kinda Tomatoes?
    You can get diced tomatoes plain, or flavored. The Mexican style ones work well in this soup.
