When you plant zucchini, you must have a plan to prevent them from taking over the world. Running its prolificness through a food processor and turning it into bread is a good start. This recipe is very moist, sweet, and quite tasty.
Ingredients
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 Tablespoon cinnamon
- 3 eggs
- 1 cup oil
- 2 1/4 cups sugar
- 1 Tablespoon vanilla
- 2 cups shredded zucchini
- 1 cup nuts (optional)
Why isn't it green?
Preheat oven to 325 degrees. Grease two 9x5 loaf pans, set aside.
Combine flour, soda, salt, baking powder and cinnamon in small bowl. Set aside.
In large bowl, beat the oil, vanilla, eggs, and sugar together. Add in the dry ingredients and beat until well combined. Stir in the zucchini and nuts.
Bake 40-60 minutes, until toothpick inserted into center comes out clean.
Notes and Hints and Stuff
- I hate nuts.
If you don't like nuts, don't use them. But it's kind of boring without them.
- It's not done yet!
In my oven, this takes the full 60 minutes to bake two loaves, sometimes even 70 minutes. Just use the toothpick test and you'll be fine.
- More spice!
Use more cinnamon if you want. I don't even measure it. Add allspice, cloves, nutmeg, or ginger if you want, too.
